Niall Hill about his two-week trial

With over 30 years’ experience both national (in Ireland) and international, Niall is best known for his work as head of food at the award-winning food company The Butler’s Pantry. Over the last 16 years Niall has won numerous of awards including the great taste awards, small business award and Blas na hÉireann. Niall has been a regular contributor to the food magazines, TV, and is a member of the advisory council for Chef network.
After completing his culinary training in DIT Cathal Bruagh Street, Niall decided to leave Ireland to expand his culinary skills in Toronto Canada, where he gained amazing experience working with some of the country’s best chefs. Returning home after five years, Hill joined the O’Flynn family at their award-winning Country House Hotel, Rathsallagh House for three years where they created a farm to table cuisine, growing a lot of their own vegetables, herbs and salads and sourcing local meats and dairy.
Hill then joined the Butler’s Pantry in 2001 as Executive Chef and within a couple of years was invited to join the Board of Directors, became a shareholder and was involved at every stage of the building and growing of the company. In March 2018, Niall started up his own food consultancy company with Glanbia, Itsa Group, Miele, The Butlers Pantry, Maria Reidy Events, Chef Network, Sodexo among his clients. Niall is currently studying a Masters in applied culinary nutrition.
Culinary creativity and lots of ideas
Asked about the most important thing regarding culinary creativity, Niall answers: "Culinary creativity is what keeps me in the industry we are in, I could not imagine doing a job where you are not able to be creative. As a chef you can have an idea one day and the next day it is on the menu. That one dish can spark 10 new dishes and that is the beauty of culinary creativity as there is no set rules or limits to what you can create.". Niall found out about Gastronomixs through Chef Network. About his first impresson of Gastronomixs: "I loved it, and found it very easy to navigate. I love the fact that you can search a simple ingredient and lots of ideas are available that can be used in different compositions."

When we ask Niall about what he thinks the number 1 benefit of Gastronomixs is, he says: "It is such a useful tool for any chef to stay fresh and on top of their game in regards to creativity and pushing the boundaries. It is a one stop shop for inspiration with endless combinations. I also love the fact that it is updated all the time and features guest chefs from around the world."
The latest dish that Niall developed using Gastronomixs, was a dessert using beetroot and lime, which needed some texture to finish it. He used the beetroot biscuits component which finished it off perfectly.
