Stephen Holland is the Executive Sous Chef at Lough Erne Golf Resort in Northern Ireland. Before, he has worked at Castle Leslie Estate (Glaslough, Ireland) and he has travelled a lot in Australia, the United States of America and New Zealand - always working in 4/5 star hotels and fine dining restaurants.

Creating dishes

When creating a dish, Stephen prefers to takes his time. He says: "Working on a dish should not be rushed and simplicity is key. I always use the best local produce that's in season, work my creativity and serve. Simple!". Stephen found out about Gastronomixs through Chef Network.
