Chopped pear jelly
Tea and pear go hand in hand and form a lovely structure when made into a jelly. Goes well with strong flavours like cheese and liver.

Ingredients
- 400 ml pear juice or pear cider
- 1 tea bag Earl Grey
- 4 leaves gelatine, soaked in cold water
- 50 g sugar
Preparation method
- Brew the Earl Grey in the pear juice to make tea.
- Dissolve the sugar in the hot tea and then add the gelatin.
- Set in the refrigerator to firm up.
- When the jelly is firm, it is easy to chop into fine pieces.
Serving suggestions
- As a component in a dish with confitted duck or duck liver.
- As a component in a cheese dish with Roquefort, walnuts, and caramelised pear.
