Potato straws with nutmeg

Easy to make crisp, on which you can vary endlessly. Potatoes and nutmeg form a classic flavor combination that always works well.

Ingredients

  • 500 potatoes (floury)
  • 150 butter
  • 30 milk
  • ground nutmeg
  • eggs
  •  as needed salt

Preparation method

  • Peel the potatoes and cut into equal sized pieces. 
  • Boil the potatoes until tender and mash them.
  • Mix the mashed potatoes with the butter and milk
  • Season with salt and nutmeg to taste.
  • Leave the mash to cool, then mix with the eggs.
  • Pipe the mixture into thin straw shapes and dry in the oven at 135°C until crispy.

Serving suggestions

  • As a snack with an aperitif.
  • As a crunchy garnish.
  • Vary by using different spices to tailor the component to various compositions.
