Broccoli pesto
This fresh-tasting pesto is delicious with pasta, on bread or with grilled vegetables.

Ingredients
- 200 g broccoli
- 20 g basil
- 1/2 lime, juice
- 75 g gruyère AOP
- 50 g hazelnuts
- 150 ml olive oil
- 2 cloves garlic, puffed
- as needed salt and pepper
Preparation method
- Put all the ingredients in a food processor and purée until you have a fine consistency.
- Season to taste with salt and pepper.
Serving suggestions
- Goes well with walnuts, for example pasta stuffed with walnuts and ricotta or on walnut bread.
- Substitute basil with flat-leaf parsley for a fresh flavour.
- Also delicious with Pecorino cheese or a good-quality mature cheese.
