Broccoli pesto

This fresh-tasting pesto is delicious with pasta, on bread or with grilled vegetables.

Ingredients

  • 200 broccoli
  • 20 basil
  • 1/2 lime, juice
  • 75 gruyère AOP
  • 50 hazelnuts
  • 150 ml olive oil
  • cloves garlic, puffed
  •  as needed salt and pepper

Preparation method

  • Put all the ingredients in a food processor and purée until you have a fine consistency.
  • Season to taste with salt and pepper.

Serving suggestions

  • Goes well with walnuts, for example pasta stuffed with walnuts and ricotta or on walnut bread.
  • Substitute basil with flat-leaf parsley for a fresh flavour.
  • Also delicious with Pecorino cheese or a good-quality mature cheese.
