Dried tomato

Sun-dried tomatoes are very popular but the best quality ones are often expensive. You can easily make them yourself in a food dehydrator and also decide for yourself how dried you want them.

Ingredients

  • kg tomatoes
  • 100 ml olive oil
  • cloves garlic
  • sprigs rosemary
  • 10 sprigs thyme
  •  as needed salt and pepper

Preparation method

  • Rinse the tomatoes and cut into quarters.
  • Finely chop the garlic, thyme, and rosemary and mix this with the olive oil, salt, and pepper.
  • Then mix this in a bowl with the tomato wedges.
  • Leave the mixture to marinate for one hour before placing the tomatoes in the food dehydrator.
  • Dry the tomatoes at 60°C for four to twelve hours until you have achieved the desired result. 

Serving suggestions

  • Very delicious in a salad with mozzarella or burrata and basil.
  • As a component in a composition with white beans and octopus.
  • As part of a selection of tapas or antipasti.
