King prawn pil pil

Pil pil is a typical Basque dish. Fish or seafood are cooked in a spicy oil that is flavoured with ground paprika and garlic.

Ingredients

  • 450 jumbo prawns
  • 10 salt
  • 50 butter
  • 200 ml oil
  • cloves garlic
  • 20 chilli flakes
  •  as needed mild paprika powder

Preparation method

  • Clean the king prawns and mix with the salt.
  • Set aside for 30 minutes.
  • Chop the garlic.
  • Heat the oil and butter in small earthenware dishes.
  • Add the garlic and chilli flakes.
  • Once they become light brown in colour, add the king prawns.
  • Fry the prawns for three to six minutes until done.
  • Sprinkle with the ground paprika and serve immediately.

Serving suggestions

  • As part of tapas.
  • As an amuse-bouche, with roasted sweet pepper, spring onions, and red chilli pepper.
