Kingfish roasted with miso

This popular fish is often called ‘kingfish’ or ‘yellowtail’ for short. The fish is often used to make sashimi but can also be used for so much more. This fish is marinated with miso and then roasted in a hot oven.

Ingredients

  • 300 ml mirin
  • 200 ml sake
  • 900 blond miso
  • 500 sugar

Preparation method

  • Bring the mirin and the sake to the boil.
  • Remove from the heat and stir in the miso with a whisk.
  • Add the sugar and stir until dissolved.
  • Pour the mixture over the kingfish and leave to marinate for 2 days.
  • Remove the fish from the marinade after 2 days.
  • Wipe the marinade from the fillet and place on a baking tray.
  • Cook the fish in the oven at 240°C for 5 minutes.

Serving suggestions

  • As a component in a dish with cauliflower, broccoli, and Japanese potato.
  • As a component in a dish with celeriac, shiitake mushrooms, and sea lavender.
