Freekeh crème

The bold, smoky flavour of freekeh is perfect for creating a delicious crème bursting with flavour.

Ingredients

  • 150 freekeh
  • 500 ml water
  • 40 ml olive oil
  •  as needed salt and pepper

Preparation method

  • Place the freekeh in a large pan with water and salt to taste.
  • Place the pan over a low heat and cover with a lid.
  • Boil the freekeh for 25 to 30 minutes until tender.
  • Blend together with a little of the cooking liquid in a thermo blender until smooth.
  • Season to taste with the olive oil, salt, and pepper.

Serving suggestions

  • Use in a composition with components of butter, turbot, and fennel.
  • Use in a composition with components of lamb, aubergine, and yoghurt.
  • Use in a composition with components of pork, tomato, and sage.
