Firm horseradish crème

A simple but very tasty preparation that maximises the flavour of horseradish.

  • Lactose
  • Gluten
  • Cow's milk
  • Vegetarian


  • 500 horseradish
  • 70 whipping cream
  •  as needed salt

Preparation method

  • Peel the horseradish and cut into manageable pieces.
  • Process these pieces into juice with the juicer.
  • Flavour the juice with the skyr. Be careful, the juice has a very strong flavour!
  • Whip the cream until it is lumpy.
  • Spoon this through the skyr-horseradish mixture.
  • Season with salt and additional horseradish juice if necessary.

Serving suggestions

  • Use in a composition with components of herring, shallot and dill.
  • Use in a composition with components of sea buckthorn, beef and carrot.
  • Use in a composition with carpaccio of smoked beetroot, green apple and aged cheese puffs.
