Crisp strawberry
A fantastic crispy strawberry that is bursting with flavour. By drying it at a low enough temperature you can avoid the jam-like flavour of cooked strawberries.

Preparation method
- Slice the strawberries into slices of around 2mm thick using a sharp knife.
- Place them neatly on a sheet of greaseproof paper and place in a food dehydrator at 45°C for twelve hours.
- Store in an airtight container, preferably with silicone granules, to keep them as dry as possible.
Serving suggestions
- Delicious in a composition with tonka beans, olives, and balsamic vinegar.
- Perfect with lobster, asparagus, and coconut.
- Goes well with components of passion fruit, white chocolate, and olive oil.
