Cauliflower preserved in tarragon vinegar

Raw cauliflower tastes very good too. The tarragon vinegar enhances the flavour just that bit more and it doesn’t lose its texture.

  • 400 cauliflower
  •  as needed tarragon vinegar

Preparation method

  • Cut the cauliflower into thin slices to produce a kind of coral.
  • Pour the tarragon vinegar over the cauliflower.
  • Run it twice through the impregnation process in the vacuum machine. For that process, place the cauliflower on a rack or tray in the vacuum machine and run the vacuum cycle twice.
  • Serve the cauliflower within 2 hours.

Serving suggestions

  • Delicious with dishes with oysters, shallots, and vinegar.
  • Perfect combined with components of tuna, edamame beans, and onion.
  • Combines well with beef, onion, and ginger.
