Vegan passion fruit crémeux
To make a crémeux vegan, you need to replace quite a few components. We tried to achieve the desired end result without necessarily replacing each of the ingredients. The outcome is packed with flavour!
Allergens & dietary requirements
500 g passion fruit coulis
100 g sugar
600 g Alpro Whipping
8 g agar agar
2 g Citras
50 g olive oil
Reduce the passion fruit coulis and the sugar to 200g.
Add the Alpro Whipping and bring to the boil.
Add the agar agar and citric acid while continuing to stir and cook for another two minutes.
Pour the mixture onto a baking tray and allow to set in the refrigerator.
Blend until smooth in a blender, like a gel, and add the olive oil while the machine is running.
Press the crémeux through a sieve and store in a piping bag or container.
Delicious in a dessert with components of vegan white chocolate, coconut, and yuzu.
Surprisingly tasty in a dessert with tonka beans, pistachio, and rose.
