Vegan passion fruit crémeux

To make a crémeux vegan, you need to replace quite a few components. We tried to achieve the desired end result without necessarily replacing each of the ingredients. The outcome is packed with flavour!

  • 500 passion fruit coulis
  • 100 sugar
  • 600 Alpro Whipping
  • agar agar
  • Citras
  • 50 olive oil

Preparation method

  • Reduce the passion fruit coulis and the sugar to 200g.
  • Add the Alpro Whipping and bring to the boil.
  • Add the agar agar and citric acid while continuing to stir and cook for another two minutes.
  • Pour the mixture onto a baking tray and allow to set in the refrigerator.
  • Blend until smooth in a blender, like a gel, and add the olive oil while the machine is running.
  • Press the crémeux through a sieve and store in a piping bag or container.

Serving suggestions

  • Delicious in a dessert with components of vegan white chocolate, coconut, and yuzu.
  • Surprisingly tasty in a dessert with tonka beans, pistachio, and rose.
  • Combines well with components of matcha, avocado, and coffee.
