aged or extra-aged cheese

Preparation method

  • Grate the cheese with a fine grater.
  • Cover a baking sheet with a silicone sheet.
  • With a template or cutter, make small rounds of the cheese. Make sure they are a few millimetres thick.
  • Melt in a 160°C oven until golden brown.
  • Take out of the oven and store in a tightly sealed container until needed.
  • To serve, place a few pieces of popcorn on a silicone sheet and cover with a prepared cheese tuile.
  • Let melt over the popcorn in a 160°C oven.

Serving suggestions

  • As an amuse-bouche or a snack.
  • As a garnish on a salad with nuts and cheese.
