Ingredients

cloves

garlic

egg yolks (or 110g pasteurised egg yolk)

salt

tsp

pepper

olive oil

 

 

lemon juice to taste

Preparation method

  • Wrap the garlic cloves in aluminium foil and roast in an oven at 180°C for 25 minutes.
  • Hang a sieve above a bowl. Press the garlic cloves through the sieve.
  • Mix the garlic pulp with the egg yolk, salt, and pepper. You can do this with a whisk or a planet mixer.
  • Next, add the oil in a thin stream, continuing to whisk or mix slowly. Do not beat!
  • If you like, season to taste with lemon juice.
  • Store at 4°C.

Serving suggestions

  • Variation tip: use mustard or vinegar for a different flavour accent.
