Ingredients

aged goat's cheese

chives, chopped

egg white, pasteurized

Preparation method

  • Grate the cheese and mix with the panko, chives and paprika.
  • Degrease the bowl and whisk of a planet mixer, and use it to beat the egg whites until stiff peaks form.
  • Carefully fold into the cheese mixture.
  • Pinch off small balls and roll into croquettes. Refrigerate until use.
  • Deep-fry briefly in oil at 180°C and drain on paper towels.

Serving suggestions

  • As an amuse-bouche or snack. Serve with fried parsley and a dipping sauce of red beet syrup, crème fraîche and mayonnaise.
  • As a garnish on a salad with nuts and cheese.
