Preparation method

  • Blanch the herbs very briefly in boiling water and then cool immediately in ice water.
  • Place the herbs between two tea towels to dry well.
  • Finely chop the herbs and mix through the butter.
  • Season to taste with salt, pepper, and a little lemon juice.
  • Beat the butter airy with one tablespoon of mayonnaise in a planet mixer.
  • The mayonnaise ensures that the butter will remain firm for longer at room temperature.

  • As a spread for bread.
  • As a flavour enhancer in potato and vegetable purée.
  • As a flavour enhancer in vegetable dishes
  • As a garnish or sauce on pan-fried meat or fish.
