wasabi peanuts

algae powder

Preparation method

  • Brown the sesame seeds in the oven and set aside to cool.
  • Break the wasabi peanuts and crispy fried onions briefly in a blender and mix with the sesame seeds.
  • Lastly, add the algae powder.

Serving suggestions

  • As a crispy garnish in a composition with halibut, dashi mousseline, sea lavender, and white soya foam.
  • As a crispy garnish in a salad with prawns, radish, cucumber, spring onions, and avocado.
