Preparation method
- Brown the sesame seeds in the oven and set aside to cool.
- Break the wasabi peanuts and crispy fried onions briefly in a blender and mix with the sesame seeds.
- Lastly, add the algae powder.
Serving suggestions
- As a crispy garnish in a composition with halibut, dashi mousseline, sea lavender, and white soya foam.
- As a crispy garnish in a salad with prawns, radish, cucumber, spring onions, and avocado.
