Ingredients

brown caster sugar

ketchup

mustard powder

apple cider vinegar

tomato juice

Preparation method

  • To make the marinade, boil the tomato juice and vinegar and dissolve the caster sugar in the liquid.
  • Mix with the remaining ingredients.
  • Remove the membrane from the back of the spare ribs.
  • Cook the spare ribs in the marinade until done.
  • Strain the marinade, reduce, and use as a glaze for the ribs.
  • Preheat the smoker.
  • Smoke the spare ribs in the smoker for ten minutes.
  • Brush the spare ribs with some of the reduced marinade and place in the oven to lightly caramelise. 

Serving suggestions

  • As a main dish with a classic cabbage salad, sweetcorn, or chips.
  • Cut the meat from the bone and use in a salad.
  • Experiment with different types of wood chips, such as whisky barrels, cherry wood, apple wood, or even pine branches.
