Anchovies fried on bread

As the bread is cut very thinly, it becomes very crispy during frying and the fish is given a kind of breadcrumb layer as a result.

Ingredients

  • 10 anchovy fillets
  •  granary bread
  •  olive oil
  •  egg white
  •  salt and pepper

Preparation method

  • Freeze the bread and then cut it into wafer-thin slices using a meat slicer.
  • Rinse the fillets under running cold water and place on sheets of kitchen towel to dry.
  • Spread lightly-beaten egg white onto the bone side.
  • Lay the wafer-thin slice of bread on top.
  • First fry with the bread side down until golden, then turn over and fry the skin side until crispy.
  • Season to taste with salt and pepper.

Serving suggestions

  • As a component in a composition with ratatouille and egg.
  • As a component in a salad.
