Anchovies fried on bread
As the bread is cut very thinly, it becomes very crispy during frying and the fish is given a kind of breadcrumb layer as a result.

Ingredients
- 10 anchovy fillets
- granary bread
- olive oil
- egg white
- salt and pepper
Preparation method
- Freeze the bread and then cut it into wafer-thin slices using a meat slicer.
- Rinse the fillets under running cold water and place on sheets of kitchen towel to dry.
- Spread lightly-beaten egg white onto the bone side.
- Lay the wafer-thin slice of bread on top.
- First fry with the bread side down until golden, then turn over and fry the skin side until crispy.
- Season to taste with salt and pepper.

- As a component in a composition with ratatouille and egg.
- As a component in a salad.
