Preparation method

  • Rinse the fillets under running cold water and place on sheets of kitchen towel to dry.
  • Season the anchovy fillets to taste with salt and pepper.
  • Soften the butter and mix the zest and juice of the preserved lemon.
  • Place the anchovy filet in a vacuum sealer bag together with the lemon butter and pull vacuum.
  • Cook at 65°C for 15 minutes.

Serving suggestions

  • Serve with gnocchi and finely-chopped green herbs.
  • Serve with components of aubergine.
