Preparation method

  • Heat the milk together with the star anise.
  • Infuse for ten minutes and cover with cling film.
  • Set aside for ten minutes to infuse further.
  • Sieve the star anise from the milk.
  • Use immediately or cover well and refrigerate until use.

Serving suggestions

  • Create an airy foam using a hand-held blender or milk frother.
  • As a basic ingredient for a warm espuma. To make this, add 1/3 egg whites and pour into a siphon. Charge with one cartridge and set to no higher than 70°C.
  • As a basic ingredient for a cold espuma. Set the milk aside to cool down and mix one part cold milk with one part sweetened cream. Transfer the mixture to a siphon and charge with one cartridge.
