Preparation method

  • To make the pear & apple sauce, peel the pears and apples and cut into thin evenly-sized slices, melt the sugar until golden brown, add the finely chopped pear, briefly stir, and then add the apple, some freshly-grated lemon zest, and a few drops of lemon juice.
  • Sweat thoroughly, strain the mixture in a sieve, and finely blend.

Serving suggestions

  • As a component of a main dish, e.g. with chocolate components, yuzu curd, banana and sea buckthorn berry.
  • As a sauce in a composition with components of poultry, black pudding, and duckliver.
  • In a composition with components of gorgonzola, pecannuts and caramel.
