Ingredients

sweet apples

dl

sugar water

cinnamon sticks

Preparation method

  • Heat the sugar water to the boiling point and let the cinnamon sticks infuse in it for approximately half an hour.
  • Using a mandoline, slice the apple into fine julienne.
  • Let the apple sit in the cinnamon sugar water for approximately 5 minutes, then remove and drain.
  • Distribute the apple evenly over silicon sheets, using a punch to shape if desired.
  • Bake in a 120°C oven for approximately 30 minutes. Allow to cool and store in a well-sealed container with silicone granules.

Serving suggestions

  • As a crunchy garnish.
  • As a component in a composition with red fruits, red beet, citrus fruits, or yoghurt.
