Preparation method

  • Mix together the 240g of flour, caster sugar, 180g of butter, and the egg until a smooth dough has formed and roll this into a ball. 
  • Leave to rest in the refrigerator for one hour.
  • Peel the apples and cut into pieces of equal size.
  • Mix the apple pieces with the cinnamon sugar, breadcrumbs, cornflour, and raisins.
  • Preheat the oven to 170°C.
  • Mix together the 180g of flour, granulated sugar, 100g of butter, and speculaas biscuits in a food processor to make a crumble.
  • Press the smooth dough into a greased baking tin or sheet.
  • Spread the apple filling over the dough.
  • Sprinkle the crumble over the filling and gently press down.
  • Bake the cake for 50 minutes in a preheated oven.

Serving suggestions

  • Serve with coffee or tea.
  • As a component in a dessert with cinnamon ice cream and vanilla sauce.
  • In a dessert with citrus, whipped cream, and ginger.
