Ingredients

butter

granulated sugar

star anise

Preparation method

  • Cut the apricots in half and remove the stones.
  • Cut each half into four pieces.
  • Put the butter and sugar in a pan and lightly caramelise.
  • Add the apricots and star anise.
  • Cook the mixture on a medium heat for around ten to fifteen minutes.
  • Remove the pan from the heat and take out the star anise.
  • Purée with a hand-held blender and set aside in the refrigerator until use.

Serving suggestions

  • As a side dish with game or poultry main dishes.
  • In a composition with fish, shellfish, and crustaceans.
