Preparation method

  • Remove the skins from the apricots and take out the stones.
  • Place the apricot halves in a container that fits in the vacuum machine.
  • Add cooled camomile tea and pull vacuum.
  • Repeat this process until the apricots are completely saturated with the camomile tea.

Serving suggestions

  • As a component in a dessert with almond and chocolate.
  • In a composition with a tartare of langoustines.
  • In a dessert in combination with ginger and citrus components.
