artichokes, cleaned

peanut oil

lemon juice

sprig of

rosemary

sprigs of

thyme

stock

anchovies

Preparation method

  • Fry the anchovies in the peanut oil with the lemon juice, rosemary, and thyme.
  • Blend the cooked artichokes together with the stock and the anchovies.
  • Pass through a fine sieve.

Serving suggestions

  • As a component in a composition with olives, bread, mackerel, radish, onion, and yoghurt.
  • Serve with sourdough bread.
