Ingredients

watercress

garlic

Preparation method

  • Clean the artichokes so that just the hearts remain.
  • Add the juice of the lemon to 2 litres of water and bring this to the boil.
  • Cook the artichokes in the lemon water until cooked al dente.
  • Blanch the watercress for 1 second and immediately plunge into iced water.
  • Pat dry and coarsely chop up the watercress.
  • Blend the watercress with the garlic and oil in a blender.
  • Cut the artichokes into segments and allow to marinate in the oil for a day.

Serving suggestions

  • The marinated artichokes make a perfectly refreshing addition to a charcuterie platter or antipasti.
  • Can be perfectly combined with smoked fish, green herbs, and yoghurt.
  • Perfect in combination with honey, mustard and goatscheese.
