Avocado dressing

The fat content of the avocado produces a very subtle creamy dressing that can be combined with many other ingredients. If you are able to obtain avocado oil, it brings out the avocado flavour even more, but a good alternative is olive oil.

Preparation method

  • Purée the avocado in a (hand-held) blender.
  • Add the mustard and white wine vinegar.
  • Gradually mount the mixture with the two types of oil.

Serving suggestions

  • A delicious dressing for all kinds of salads. Tomato salad, Greek salad with feta, green asparagus salad, shaved fennel salad, pasta salad etc.
  • As a dressing with hot dishes, e.g. with grilled white fish or baked salmon.
