Preparation method

  • Combine the vodka with the tempura flour and beat into a tempura batter of a consistency that will coat the avocado in a thin layer.
  • Add the black sesame seeds.
  • Peel and pit the avocados, and slice each into 8 sections.
  • Using chopsticks or kitchen tweezers, dip each section in the batter and fry for 3 minutes at 175°C.
  • Allow to drain on paper towels and serve immediately.

Serving suggestions

  • Serve as a starter or snack, e.g. with a zesty chilli sauce, spicy tomato sauce or (see photo) with tsuyu, a combination of soy sauce and dashi.
  • As a component in a composition with tomato, anchovy, soy, leek, or garlic.
