Preparation method

  • Leave the bacon to infuse with the milk at 70°C for one hour.
  • Strain the milk and season to taste with salt and pepper.
  • Froth up the milk with a cappuccino maker.

Serving suggestions

  • As a topping for a soup, e.g. a celeriac crème soup.
  • As a component in a composition of quinoa, cod, onion, egg, or cauliflower.
  • Delicious with softly cooked trout with components of almonds, celery and mushrooms.
