Ingredients

red port wine

ml

balsamic vinegar

300

ml

jus de veau

g

smoked bacon

ml

olive oil

Preparation method

  • Reduce the port to 300ml.
  • Add the balsamic vinegar, jus de veau, and bacon and reduce once again to 300ml.
  • Strain out the bacon.
  • Stir in the oil using a hand blender or whisk.
  • Season with salt.

Serving suggestions

  • As a dressing with various salads or starters.
  • Serve with a cold preparation of pork neck, tomato, and a herb salad.
  • Delicious in a salad with goat cheese, rocket salad and nuts.
