Bacon-wrapped haricots verts
A classic and delicious vegetable garnish.

Preparation method
- Clean and trim the haricots verts by chopping off the ends.
- Fill a pan with water and 1% salt and bring this to the boil.
- Blanch the haricot verts in plenty of water until al dente. This will take approximately three minutes.
- Immediately cool in iced water.
- Drain thoroughly in a sieve.
- Place two slices of bacon on top of one another lengthwise, allowing them to overlap. Place the haricot verts at one end of the bacon and roll into a roll.
- Bake the rolls in an oven at 180°C for approximately eight minutes.
Serving suggestions
- As a component in an entremets or main course with fish or meat.
- Use different types of cold cuts instead of the bacon such as serrano ham, Ibérico ham, or smoked bacon.
