Preparation method

  • Clean and trim the haricots verts by chopping off the ends.
  • Fill a pan with water and 1% salt and bring this to the boil.
  • Blanch the haricot verts in plenty of water until al dente. This will take approximately three minutes.
  • Immediately cool in iced water.
  • Drain thoroughly in a sieve.
  • Place two slices of bacon on top of one another lengthwise, allowing them to overlap. Place the haricot verts at one end of the bacon and roll into a roll.
  • Bake the rolls in an oven at 180°C for approximately eight minutes. 

Serving suggestions

  • As a component in an entremets or main course with fish or meat.
  • Use different types of cold cuts instead of the bacon such as serrano ham, Ibérico ham, or smoked bacon.
