The combination of strawberries or raspberries with aged balsamic vinegar is well-known, but this is a somewhat more accessible variant. The flavour is tart, with a lot of depth, and can be paired with either savoury or sweet elements.

Preparation method

  • Combine the balsamic vinegar, water, and treacle sugar marinate the raspberries in the mixture.

Serving suggestions

  • To accompany lobster and other shellfish with a light sweetness.
  • In salads, e.g. with goat's cheese, rocket and bacon bits.
  • As part of a dessert, e.g. with white chocolate and mascarpone.
