Preparation method

  • Bring the water, sugar, seeds of the vanilla pods and a little orange zest to the boil but do not allow the mixture to caramelise.
  • Leave it to cool to approx. 60 degrees and then add the lemon juice, 2 tablespoons of the orange juice and the banana (finely diced).
  • Leave it to cool and refrigerate until use. 

Serving suggestions

  • As part of desserts with chocolate, caramel, vanilla ice cream or citrus fruits.
  • As a basic ingredient in crèmeux, ice cream or espumas.
