Banana paper

Ultra-thin biscuits flavoured with caramelised banana. Very easy to make and can be prepared well in advance. They can be used to garnish desserts or, as you can see in the photo, presented in the shape of a plant. To do so, we will use a template for the leaves and a flower pot filled with cocoa nibs for the soil. Fun to serve with coffee or as a little side dish with a dessert.

Preparation method

  • Mash the banana and mix with the other ingredients.
  • Stir until you have a homogeneous mixture and spread out onto silicon mats as thinly and evenly as possible. You could also use a template to create a specific shape.
  • Place in the freezer to harden.
  • Bake in an oven at 160°C for 10 minutes until crunchy and golden brown.
  • Break into pieces and store in an air-tight container with silicon grains.

Serving suggestions

  • As a garnish with desserts.
  • As part of biscuits or friandises.
  • As a dessert amuse-bouche in combination with a tube of chocolate ganache.
