Preparation method

  • Remove the intestines from the anchovies and rinse the belly cavity thoroughly.
  • Pat dry with kitchen towel.
  • Finely chop the yellow peel of the preserved lemon.
  • Fill the anchovies with the preserved lemon peel, tarragon, and thyme.
  • Lay them on the barbecue and cook on both sides until done.

Serving suggestions

  • Serve with a component of tomato, such as marinated tomato.
  • As part of a selection of tapas or antipasti.
