Ingredients

sea bass (1 kg or more)

 

 

fennel stalks

 

 

olive oil

 

 

salt and pepper

Preparation method

  • Descale the sea bass.
  • Gut the fish and rinse under cold running water.
  • Pat dry with paper towels.
  • Season the cavity with salt and pepper.
  • Stuff a few fennel stalks in the body cavity and brush with olive oil.
  • Place the fish, surrounded by a few more fennel stalks, in a grill basket and grill for 12-15 minutes on the barbecue. If you do not have a barbecue, you can also do this in a roasting pan in the oven.
  • Season with salt and pepper after cooking (otherwise the seasonings will burn).

Serving suggestions

  • As a composition with green peppers, spring onions and sherry vinegar.
  • Serve whole, with a refreshing salad and a potato component.
