Ingredients

fresh ginger, grated

dark rum

Preparation method

  • Mix the brown sugar with the grated ginger and brown rum.
  • Wash and grate the peel of the three limes with a fine grater and add this to the rub.

Serving suggestions

  • As a marinade for fruit. Clean a pineapple, rub in with the rub, and caramelise on the Big Green Egg.
  • As a marinade for baking fruit. Peel hard fruits such as apples and pear, rub them in with the rub, wrap in aluminium foil, and bake in the over or on the barbeque.
  • Rub the mixture over a cooked ham and caramelise in the oven.
  • Brine pork belly, cook it sous vide, and caramelise with the rub.
