Preparation method

  • Boil the freekeh in plenty of water for 20 to 25 minutes until al dente.
  • Drain in a sieve.
  • Rinse with cold water and drain well.
  • Mix with the olive oil and finely chopped lovage.
  • Season to taste with salt and pepper.

Serving suggestions

  • Use as a key ingredient in a salad or as a component in a composition.
  • Use in a composition with components of sea bass, parsnip, and watercress.
  • Use in a composition with components of pork, sweet pepper, and mushrooms.
