Preparation method
- Boil the freekeh in plenty of water for 20 to 25 minutes until al dente.
- Drain in a sieve.
- Rinse with cold water and drain well.
- Mix with the olive oil and finely chopped lovage.
- Season to taste with salt and pepper.
Serving suggestions
- Use as a key ingredient in a salad or as a component in a composition.
- Use in a composition with components of sea bass, parsnip, and watercress.
- Use in a composition with components of pork, sweet pepper, and mushrooms.
