Ingredients

white wine or other flavouring agent

leaf gelatine

Preparation method

  • Soak the gelatine in cold water.
  • Carefully whisk the egg whites and icing sugar.
  • Boil the granulated sugar with a dash of water and vanilla up to 115°C.
  • Dissolve the gelatine in the sugar syrup and add to the whisked egg white.
  • Add the white wine to the mixture and whisk together while it cools to 50°C.
  • Pour into a flat tray that has been greased beforehand (e.g. with a pan release agent)
  • Tip: replace the white wine with a liquor of your choice or another flavouring agent.

Serving suggestions

  • As a friandise.
  • As part of a dessert.
