colorozo salt

Preparation method

  • Dissolve the colorozo salt in the cold water and soak the bacon in the brine for at least 12 hours.
  • Rinse the bacon with cold water and pat dry.
  • Put the bacon in a vacuum bag, seal under pressure and allow to cook in a hot water bath (e.g. in the Roner) at 67°C for 24 hours.
  • The bacon can now be used for other recipes.

Serving suggestions

  • You could, for example, heat the bacon and glaze it with oyster sauce, hoisin sauce, apple treacle or veal jus.
