Preparation method

  • Bring the lemon juice, water, lemon liqueur, and sugar to the boil in a pan.
  • Add the agar agar and Citras while continuing to stir and cook for another three minutes while stirring continuously.
  • Leave the mixture to cool down to 80°C
  • Put the basil leaves in a blender, add the gel mixture, and blend for 20 seconds.
  • Pour through a sieve into a container and cool it down so that it sets completely.
  • Blend the gel smooth in a thermoblender.
  • Pass through a fine-meshed sieve and store in piping bags, bottles, or a container in the refrigerator.

Serving suggestions

  • Delicious in a composition with tonka beans, olives, and balsamic vinegar.
  • Perfect with langoustine, green asparagus, and avocado.
  • Goes well with components of tomato, physalis, and yoghurt.
