Ingredients

white wine

Spanish peppers, roasted

onion, finely chopped

cloves

garlic, finely chopped

 

 

bay leaf

Preparation method

  • Sprinkle salt over the hake fillet and allow to stand for a while.
  • Heat the olive oil and gently fry the onion, garlic, and peppers.
  • Season to taste with the bay leaf, salt, and pepper and continue to cook.
  • Purée the pepper mixture in a blender or pass through a sieve.
  • Grease an oven dish and place the salted hake fillets in the dish.
  • Pour over the white wine and cook in the oven at 150°C for about ten minutes.
  • Then cover it with the pepper mixture and bake in the oven for another five minutes.

Serving suggestions

  • As a component in an entremets with components of fennel and tomato.
  • As a component in a main course with boiled potatoes.
  • As a component in a main course with potatoes confit and a preparation of sweet pepper.
