soy sauce

Preparation method

  • Mix the soy sauce, mirin, sake, and ginger.
  • Marinate the meat in this mixture overnight.
  • Remove the meat from the marinade and dry it well.
  • Use a kitchen blow torch to scorch the meat all over.
  • Cool the meat back down in ice water.
  • Cut the meat into thin slices and serve.

Serving suggestions

  • Delicious served with ponzu, chives, beetroot spaghetti, and deep-fried garlic.
