Preparation method
- Mix the soy sauce, mirin, sake, and ginger.
- Marinate the meat in this mixture overnight.
- Remove the meat from the marinade and dry it well.
- Use a kitchen blow torch to scorch the meat all over.
- Cool the meat back down in ice water.
- Cut the meat into thin slices and serve.
Serving suggestions
- Delicious served with ponzu, chives, beetroot spaghetti, and deep-fried garlic.
