Beetroot reduction with liquorice

Due to the naturally present sugars in the beetroots, the juice will easily reduce to a syrup. Vary by using different spices, e.g. bay leaf or cloves.

Preparation method

  • Peel, chop and juice the beetroots. Pass the juice through a fine sieve.
  • Reduce the juice over medium-low heat with star anise and liquorice powder until it reaches a syrup consistency.
  • Set aside.

Serving suggestions

  • As a component of a main dish, e.g. with kangaroo and radicchio kimchi.
  • In an appetizer with duck liver or goose liver.
  • Use in a dessert with components of red fruit, yoghurt, and chocolate.
