Preparation method

  • Melt the butter in a pan, together with the garlic.
  • Allow the butter to simmer until it reaches the colour of beurre noisette, stirring regularly.
  • Pour the butter into a clean saucepan to stop it from turning any darker, making sure to get all the scrapings.
  • Add the sage and infuse for thirty minutes.
  • Thoroughly reheat the butter and strain through a sieve.

Serving suggestions

  • Delicious in a composition with components of Jerusalem artichoke, sunflower seeds, and pasts.
  • Absolutely fantastical with potato gnocchi accompanied by Parmesan cheese and oregano.
  • Marvellous in a composition that includes pork accompanied by apple, risotto, and garden peas.
