Ingredients

pasteurised egg yolk

As needed:

 

salt and pepper

Preparation method

  • Mix everything together and emulsify with a hand-held blender.
  • Season to taste with salt and pepper.
  • Store at 4°C.

Serving suggestions

  • As a sauce to serve with steak tartare.
  • As a dressing for salads.
  • Use in a dish with components of poultry, potato, and cauliflower.
  • Use in a dish with components of mussels, leek, and tomato.
