Preparation method

  • Use the hand-held blender to mix the coulis, juice, milk, and cream.
  • Add the lecithin and dissolve it in the mixture.
  • Create a foam by pulsing the mixture with the hand-held blender.

Serving suggestions

  • As a component in a dessert with blackberry and basil panna cotta, strained yoghurt sorbet, and marinated blackberries.
  • As a component in a dessert with an exotic fruit salad and mascarpone ice cream.
